What is mesocarp?

The fibrous intermediate layer of the Cocos nucifera fruit, located between the outer exocarp (skin) and the inner endocarp (shell). The mesocarp is the tissue from which both coir fiber and coir pith are extracted. Its thickness and fiber density vary with coconut variety, growing conditions and maturity at harvest.
