What is a dry (mature) coconut?

Coconut fruit harvested at full maturity (11–13 months). A mature coconut is approximately 65% nut (albumen, water, shell) and 35% fibrous husk by weight. The husk of dry coconut yields stiffer, more durable fiber than green coconut husk and is the preferred feedstock for traditional coir processing.
